All our fish is line caught in the West Coast waters of Prince Rupert and Haida Gwaii. Nets are never used, and this protects the body and meat of the fish.
To ensure we have the best seafood available all year long, we use a process called frozen at sea. The fish is cleaned, dressed and frozen at -60°C within thirty minutes of being caught. When fish is out of catching season all product is delivered in this frozen state directly to our door. We then temper the seafood back to its original fresh state, safeguarding the same fresh, natural characteristics as when the fish was caught.
All of our fish is wild, not farm-raised. This leads to a richer and completely natural taste experience. |
